Spicy Tuesday – Thai-Style Cucumber Salad – Mint

Last week we presented a class at the Thomas F Chapman Family Cancer Wellness center on Healthy Thai-Style cooking – this was one of the recipes that everyone enjoyed.

We love using mint because it promotes healthy digestion and aids in decreasing any nausea. And mint alone is a natural stimulant so besides taking in some of this beautiful spring weather in Atlanta; you can enjoy this recipe to lift your mood too!

Thai Cucumber Salad

  • 1 English Cucumber
  • ½ Red Onion
  • ½ Cup Packed Mint Leaves, coarsely chopped
  • 2 TB Rice Wine Vinegar
  • 1 TB Black or Toasted Sesame Oil
  • 1 TB Thai Chili Sauce
  • ½ tsp Fish Sauce
  • Black Sesame Seeds for Garnish

 

Step One

Slice the cucumber and red onion very thinly – using a mandoline or peeler. Place them in a bowl with the mint leaves.

 

Step Two

Shake the remaining ingredients together in a jar. Toss the ingredients together just before serving.

 

***A handheld mandolin makes quick work of the thinly sliced cukes and onions!
